
Pork Sub with Spicy Mayonnaise

In Quebec, it's always pork season! It's an understatement to say that our master seasoners have gone to great lengths to create a restaurant-worthy sub, ready in minutes.
Ingredients for the submarine (individual portion) :
- 1 submarine roll of your choice
- 1 pork fillet (250g)
- 1 sliced Italian tomato
- 1 sliced pickle
- 1 slice of Swiss cheese
- Arugula leaves
- Olive oil
- 5 sprigs of thyme
- “Carnivore” Spice Mixes
Ingredients for spicy mayonnaise (for 125 ml ):
- 2 tsp Les Mélangés “Spicy” spices
- 125 ml mayonnaise
- Ground black pepper
- 1 lime wedge
Preparation
Spicy Mayonnaise Recipe
- Put the mayonnaise in a bowl.
- Add the “Spicy” spices, as well as a pinch of pepper.
- Squeeze the lime wedge into the bowl and "blend" everything together until smooth.
Pork Sub Recipe
- Cut the pork fillet lengthwise, brush with olive oil and Les Mélangés “Carnivore” spices.
- Heat the skillet over medium-high heat with olive oil, add the pork and thyme, and sear until desired doneness.
- Cut the submarine roll in half, brush the inside with olive oil and season with pepper. Bake at 350°F for 1 minute.
- Remove the bread from the oven, add the Swiss cheese and return to the oven until the cheese is melted.
- Spread the spicy mayonnaise on the inside of the bread, then top with the pork, tomatoes, pickles and arugula.
