Ingredients :
- 450g of spaghetti
- 270ml of sun-dried tomatoes in oil
- 1 zucchini cut into cubes
- 1 chopped onion
- 1 clove of garlic, finely chopped
- A few arugula leaves
- 100ml aged parmesan shavings
- Olive oil
- 1 tbsp. of “Italian Herbs” spice mix
Preparation
- Bring salted water to a boil in a large pot.
- Cook the pasta for about 10 to 12 minutes, then drain.
- Add 100ml of olive oil to a wok or large skillet. Turn heat to medium-high and add the onion, garlic, and zucchini. Stir for 5 minutes.
- Add the sundried tomatoes and pasta, cook for 5 to 7 minutes, stirring everything.
- Serve in a bowl, then garnish with arugula and Parmesan.
