Ingredients :

  • 450g of spaghetti
  • 270ml of sun-dried tomatoes in oil
  • 1 zucchini cut into cubes
  • 1 chopped onion
  • 1 clove of garlic, finely chopped
  • A few arugula leaves
  • 100ml aged parmesan shavings
  • Olive oil
  • 1 tbsp. of “Italian Herbs” spice mix

Preparation

  1. Bring salted water to a boil in a large pot.
  2. Cook the pasta for about 10 to 12 minutes, then drain.
  3. Add 100ml of olive oil to a wok or large skillet. Turn heat to medium-high and add the onion, garlic, and zucchini. Stir for 5 minutes.
  4. Add the sundried tomatoes and pasta, cook for 5 to 7 minutes, stirring everything.
  5. Serve in a bowl, then garnish with arugula and Parmesan.
  6. Delicious!
