The Lunch Pocket Pizza is a delicious twist on the classic pizza, perfect for starting the day with a burst of flavor and great nutrients to keep you going until dinnertime. Here's what we're offering:
Ingredients for the dough :

250 ml (1 cup) of lukewarm water

5 ml (1 tsp) instant yeast

5 ml (1 tsp) sugar
- 300 g (2 cups) unbleached all-purpose flour
- 5 ml (1 tsp) salt
Ingredients and preparation for the sauce :

2 tbsp honey
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp. of "Les Mélangés" carnivorous spices
Mix all ingredients in a bowl
Ingredients for the pizza:

1 cup shredded mozzarella cheese
- 2 pre-cooked sliced potatoes
- 250g precooked pancetta or bacon
Preparation of the dough :
- In a bowl, combine the warm water, yeast, and sugar. Let the mixture sit for about 5 minutes, until it becomes foamy on top, a sign that the yeast is fully activated.

Mix together the flour and salt. Pour the yeast over the flour mixture and mix until a soft ball of dough forms.

On a lightly floured work surface, knead the dough for about 10 minutes. Shape it into a ball and place it in a lightly oiled bowl. Cover the bowl with a clean cloth and let the dough rest for about 30 minutes in the oven with the light on.
- Cut the dough into 4 equal parts and flatten to form 4 rounds about 6 inches in diameter.
Preparation of the pizza :
- Spread a layer of cheese on each round, leaving a 1/2 inch border around the dough.
- Place about 1/2 potato and the pancetta (or bacon) on the cheese
- Spread 2 tbsp of sauce on the pizza.
- Close the dough by folding the edge over the ingredients and seal well by applying good pressure.
- Cook over medium heat in a pan for 5-7 minutes on each side.
